5 Healthy Snack Options, Kid-Approved!

Who doesn’t love a good snack? We are always snacking in our home and also while on the go, so keeping healthy options in our kitchen is a total must. Since Aimery and I are both pretty active between working out at the gym and playing sports, I always try to incorporate more protein into our diet. Aimery definitely loves his sweets, but I do NOT love the sugar crash that comes along with it! Chocolate Tofu Pudding

Although it isn’t always easy, I do what I can to have healthy eating habits in our home. My son is such a picky eater, so it can be difficult to get him to eat foods that have a healthy twist. Normally he can smell out every vegetable I try to hide in his favorite foods - nothing gets by him! I have had to be reallyyy sneaky lately to hide nutrient-dense foods into his 5 food groups (you know - chicken nuggets, pizza, mac and cheese, yogurt, and dessert). Since Aimery started preschool this year, I am constantly running to drop off/pick up, along with all the other activities he has going on in the evenings. One Pot Lemon Chicken Piccata

Being a working single mom, I don't have a lot of time to cook. It's very rare that you will find me making a dinner using more than one pot and six ingredients! I love one-pot meals because they allow me to spend less time in the kitchen cooking and doing dishes, and spend more time with Aimery. My favorite week night recipe to make is Lemon Chicken Piccata! Fun Back to School Lunchbox Ideas

Aimery is starting preschool this year and I can not BELIEVE he's starting school already! I found an amazing preschool in the area that allows children at his age to start early, and I was lucky to grab the last spot for him this fall! Although I'm going to miss spending summer days with him, I really am looking forward to getting on a set routine of knowing when he's going to school so I can plan work accordingly. I also signed him up for soccer practice on Saturday mornings, so our life is about to get real busy!

4th of July Party Tips

It’s officially fourth of July weekend, which means it’s time for backyard BBQs! Growing up, my family never really had a fourth of July tradition. Every year, we always did something different! Some years we would travel to Maryland and hang out with my cousins, and other years we stayed local and did fireworks with friends.
