Mom's Dairy Free Zuppa Soup

When asked on Instagram which recipe you wanted to see here, an overwhelming amount of you said a winter soup! Today I’m sharing with you my mom’s dairy free Zuppa Soup, it has so much flavor and the right amount of comfort food for this season! My kids LOVE it! Keep reading for the recipe.

What you’ll need…

6 cups homemade chicken broth
1 cup unsweetened almond milk
1 tbsp chicken broth bullion
1 onion
3 cloves garlic
1 bag frozen cauliflower rice pilaf
4 cups potatoes, chopped
1 pack chicken apple sausage, sliced
1 bunch flat kale, trimmed and chopped
1/4 teaspoon cayenne pepper, or to taste
Salt and pepper, to taste

Instructions

  1. In a large pot, cook onion, garlic, and pepper flakes with 1/4 cup water over medium heat until onion is soft and translucent. Remove from stove and cool.

  2. Add onion mixture, chicken broth, chicken bullion and cauliflower into a blender and mix.

  3. Once combined, pour cauliflower mixture back into the original pot and add potatoes. Boil 10 minutes or until potatoes are cooked through.  Add sausage and kale and simmer 10 minutes more.
