How I Make Week Days Easier as a Single Mom

Being a single mom, my schedule is ALWAYS busy! Week day Mornings are normally really stressful trying to get Aimery to daycare while getting myself ready for work. Something that I have found to help busy mornings is having a coffee cart ready full of Folgers® K-Cup® Pods. This allows me to get my coffee ready in one place while running out the door! 

I like to pick up my Folgers K-Cups at Giant Carlisle! I grew up drinking Folgers coffee, and I love that now with Folgers K-Cups, it's the same Folgers taste in a more convenient way. My favorite are Folgers® 100% Colombian Coffee K-Cup® Pods and Folgers® Morning Cafe® Coffee K-Cup® Pods. I love being able to choose between the full-bodied flavor of Colombian or the light-bodied flavor of Morning Cafe® everyday! 

I always seem to forget to eat breakfast in the morning! I recently started making a 3 Layered Coffee Cake and it has been AMAZING to have on hand during busy weekday mornings! I like to make it on Sundays so I have it for breakfasts during the week. It allows me to focus on myself, by grabbing my coffee and breakfast to go! Check out the recipe below. 

3 Layered Coffee Cake
Yield: 6-8 Servings
Prep Time: 15 Minutes
Cook Time: 30 Minutes

  • 1 tsp vanilla
  • 1 cup milk
  • 1 cup oil
  • 2 eggs, beaten
  • 3 cup flour
  • 1 cup sugar
  • 3 tsp baking powder
  • ½ tsp salt
  • 2 tsp cinnamon
  • 1½ cup brown sugar
  • ½ cup butter, melted

Preheat oven to 350 degrees. Mix milk, vanilla, oil, and eggs together in a large mixing bowl. In a seperate bowl, mix flour, sugar, baking powder and salt. Combine the flour mixture with the egg mixture. Pour 1/3 of the batter in a 9x5 pan. In a separate bowl, combine cinnamon and brown sugar to create a streusel. Sprinkle 1/3 of streusel on top of the batter. Continue adding layers of batter and streusel. Drizzle with melted butter and bake for 30 minutes.
