Blackberry Thyme Baked Brie with Maple Pecans

Baked brie is a wheel of brie cheese baked in a puff pastry. For this recipe, I also included fruit, herbs, and nuts!

what do you need to make baked brie?

You only need a couple ingredients to make this baked brie.

  • puff pastry

  • brie cheese

  • blackberry jam

  • blackberries

  • pomegranate arils

  • thyme

how to make baked brie?

To make this baked brie, simply place a brie wheel on top of a puff pastry sheet and top with blackberry jam, blackberries, pomegranate arils, and fresh thyme. Fold puff pastry over the brie wheel, and brush the edges with melted butter. Bake, and top with toasted maple pecans, and enjoy!

Instructions

  1. Preheat oven to 400° Fahrenheit.
  2. Begin by preparing your puff pastry on a floured surface. If you have a larger wheel of brie, you may need to roll the puff pastry into a square so it will fit around the cheese. If you have a smaller wheel, you may need to remove some of the puff pastry. Place in a pie plate or round baking dish.
  3. Remove packaging from the brie wheel, leaving the rind on, and place on top of the prepared puff pastry, centered on the dough. Using a chefs knife, score the brie.
  4. Next, spread the blackberry jam over the brie, allowing jam to spread into the cuts of cheese. Top with blackberries, pomegranate ariels, and fresh thyme.
  5. Begin to fold over the puff pastry on top of the brie, one corner at a time, until the brie is covered about 1 inch around, and the puff pastry is shaped like a circle. Brush melted butter over the puff pastry edges.
  6. Bake for 30-35 minutes, or until brie is melted and bubbly, and puff pastry has turned golden brown.
  7. While the brie bakes, make maple pecans. In a small skillet over medium heat, add butter. Allow the butter to melt and then add brown sugar, maple syrup, cinnamon, and salt, stirring to combine. Add pecans to the pan and toss until toasted, about 2 minutes.
  8. Top baked brie with maple pecans, and serve warm. Enjoy!

Notes

Using chicken broth is optional, as it gives the potatoes much more flavor then water alone!


I like using half yukon gold potatoes, and half russet potatoes for better consistency. But you can use either, or even red potatoes!


In a pinch, you can swap cream cheese for the mascarpone.
