Brioche French Toast

Saturdays are the only day of the week where we can have a slow morning with the kids, so that calls for brunch! Inspired by a local favorite, this brioche french toast with caramelized apples, vanilla mascarpone, oat granola and maple syrup has everyone asking for seconds 🤤 Keep reading for the recipe!

WHAT YOU’LL NEED

for the french toast —
2 eggs
1/4 cup milk of choice
1 teaspoon sugar
1 teaspoon vanilla extract
2 tablespoons butter
4 slices brioche
apple, sliced thinly
granola, for topping
maple syrup, for topping

for the vanilla mascarpone whip —
4 oz mascarpone cheese
3/4 cup heavy whipping cream
1/4 cup powdered sugar
1/2 teaspoon vanilla extract

INSTRUCTIONS

  1. Start by whisking eggs in a shallow dish (I always use a paper plate to help with clean up since it’a also a good size for coating bread!). Then add milk, sugar, and vanilla extract and whisk again until combined.

  2. Melt 1 tablespoon of butter on a medium sized skillet over medium heat. While waiting for butter to melt, coat both sides of brioche slices with egg mixture. Add coated brioche to pan and cook for 3-4 minutes. Flip brioche and cook for another 3-4 minutes, or until both sides are golden brown.

  3. While french toast is cooking, melt 1 tablespoon butter on a small skillet over medium heat. Add apple slices and cook until warm and golden brown, about 2 minutes per side. Remove from heat.

  4. To make the vanilla mascarpone whip, add mascarpone cheese to a mixing bowl with heavy whipping cream. Mix until combined. Then, add powdered sugar and vanilla extract and mix once again until combined.

  5. Serve french toast while still warm with cooked apple slices and vanilla mascarpone whip. I like topping my french toast with granola, maple syrup, and powdered sugar.
