Fall Harvest Salad

No I don’t think you understand, I’m OBSESSED 🤪 Do you also get stuck on a new recipe and eat it for weeks until you get sick of it? Or maybe that’s just my ADD? lol I’ve eaten this salad every day this week because it’s so so good. The apple cider vinaigrette makes me feel like I’m walking through an orchard.

This salad is perfect for all occasions, whether you are looking for a quick lunch or something to bring along to a fall dinner party! You can add or take away anything in this salad to make it your own, next time I’m going to swap the walnuts for cranberries - yum!

WHAT YOU’LL NEED…

FOR THE SALAD:

  • 7 oz of your favorite mixed greens

  • 1 pear, thinly sliced

  • 1 apple, thinly sliced

  • 1/3 cup pecans

  • 3 slices of bacon, cooked and chopped

  • 1/4 cup feta cheese

FOR THE DRESSING:

  • 1 cup apple cider

  • 2 tbsp apple cider vinegar

  • 1 tbsp dijon mustard

  • 1 tbsp honey

  • 2 tsp extra virgin olive oil

  • salt and pepper, to taste

Instructions

  1. Make the salad: Simply toss all ingredients in a large bowl!

  2. Make the dressing: In a small pan over medium-high heat, bring apple cider and apple cider vinegar to a boil and cook for 8 minutes or until reduced to 1/2 cup of liquid. Remove from heat. Once cider liquid has cooled, wisk remaining ingredients until smooth.

  3. Toss salad with dressing and serve.
