Grilled BBQ Chicken Tacos

We love grilling in the summer, so we are constantly having BBQ chicken in our meal routine. BBQ chicken is something our whole family can agree on (four year old included), but you can only eat plain grilled chicken so many times. That being said, I’m always trying to find new ways to mix up leftovers. I was inspired by a local Mexican restaurant to try BBQ chicken in tacos, and it did not disappoint! I was amazed by how the flavors worked in these grilled BBQ Chicken Tacos. Keep reading for this easy recipe - only 5 ingredients!

GRILLED BBQ CHICKEN TACOS

What you’ll need…

  • 4 chicken breasts

  • Sweet Baby Rays BBQ sauce

  • pico de gallo

  • small tortillas

  • fresh lime juice

  • sour cream, optional

  • hot sauce, optional

Instructions:

  1. Start by marinating chicken with BBQ sauce for at least one hour or overnight.

  2. Preheat grill over medium-hight heat. Remove chicken with marinade and place on hot grill for about 15 minutes, flipping halfway through.

  3. Once cooled, chop chicken into small pieces.

  4. To serve, top chopped chicken on a warm tortilla with pico, cilantro, fresh lime juice, hot sauce, and sour cream.
