This is episode 3 of super bowl spread, no big game is the same without these loaded mini potato bites elevated with browned butter and mascarpone. These are such a crowd pleaser, everyone will love them!

  1. Preheat oven to 475° Fahrenheit and prepare a large baking sheet.
  2. Toss baby potatoes in oil and sprinkle with salt and pepper on the prepared baking sheet. Bake for 40 minutes, or until potatoes are fork tender. Allow time for potatoes to cool.
  3. While the potatoes bake, cook your prosciutto. In a large skillet over medium-high heat, warm 1 tbsp of olive oil. Add the chopped prosciutto into the pan and cook until browned, about 3-4 minutes. Remove from the pan.
  4. In the same skillet, brown the butter. Add the butter to the skillet on medium-high heat. Allow the butter to melt and then brown until it smells toasted and is a deep golden brown, stirring often, about 3 minutes. Remove from the pan to cool.
  5. Using a small cookie scoop, carefully scoop out the insides of each potato into a medium bowl. In the same bowl, add browned butter, mascarpone, salt, and pepper. Add half of each to the bowl: prosciutto, cheddar cheese, and chives, and . Stir to combine.
  6. Using the same small cookie scoop, fill up the roasted potatoes with the filling. Each potato will be overfilled. Then top each potato with 1 tsp of sour cream, more prosciutto, and more cheese. Broil for 5 minutes, or until cheese has melted. Top with more chives. Enjoy!
