Mozzarella Stuffed Caprese Burgers

I tried out my new smokeless grill today with these Mozzarella Stuffed Caprese Burgers - YUM! This recipe was so quick and easy, I prepped these before soccer practice so we can grab and go later. Keep reading for the recipe!

WHAT YOU’LL NEED…

For the burgers:

20 ounce Ground Beef

2 tablespoons Pesto

1 tablespoon Italian Seasoning

1 cup Mozzarella Cheese

2 Roma Tomatos, sliced

4 Potato Buns

Salt and pepper

For the creamy pesto

2 tablespoons Pesto

4 tablespoon Sour Cream

4 tablespoon Mayonnaise

Salt and Pepper, to taste.

INSTRUCTIONS

  1. To make the burgers, combine beef, Italian Seasoning, and pesto into a medium bowl. Season with salt and pepper. Form mixture into four rounds.

  2. Next, divide mozzarella between each round. Gently place mozzarella in center of each round and fold meat to shape and seal until each patty is stuffed. grill for 8-10 minutes.

  3. While burgers are grilling, season tomato slices with salt and pepper. Add tomato to the grill and cook until lightly browned, 1-2 minutes per side. Transfer to a plate.

  4. Go ahead and make the pesto sauce by combining the mayonnaise, sour cream, and pesto. Add salt and pepper, to taste.

  5. Half and toast buns before spreading each top bun with creamy pesto, then fill buns with patties and griddled tomato. Serve with leftover pesto on the side.
