What are s’mores cookies?

These s’more cookies include bites of chocolate, marshmallows, and graham crackers that melt to perfection in the oven. Dare I say that these may be better then the classic graham cracker, chocolate, marshmallow combo?

What do you need to make S’mores Cookies?

First, you’ll need the cookie basics:

  • salted butter

  • brown sugar

  • granulated sugar

  • eggs

  • vanilla extract

  • salt

  • flour

  • baking soda

    Then just a few more ingredients:

  • chocolate

  • graham crackers

  • marshmallows

How to make S’mores Cookies?

To make s’mores cookies, start with the standard chocolate chip cookie recipe and then stir in marshmallows, graham crackers, and more chocolate. Then, scoop the dough onto a lined baking sheet and bake until almost gooey. I recommend taking them out a few minutes early to add more chocolate, marshmallows, and graham cracker so they look like a traditional s’more when they come out a few minutes later!

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and line two large baking sheets with parchment paper.
  2. In a large mixing bowl, whisk butter, brown sugar and granulated sugar until combined. Add the eggs and vanilla extract to the mixing bowl and whisk until creamy.
  3. Fold in the flour, baking soda and salt, until combined. Add 1 cup of the chocolate, 1 cup of the graham crackers, and 1 cup of the marshmallows to the mixing bowl, stirring until just combined.
  4. Using a cookie scoop, create 2-3 tbsp cookie dough balls and place onto the lined baking sheets. Optional: Refrigerate the cookie dough balls for at least 1 hour.
  5. When you are ready to bake, place cookies into the oven for 10 minutes. Remove from the oven and divide the leftover chocolate, graham crackers, and marshmallows into the tops of the cookies. You can also use this time to round out your cookies by swirling a glass or cookie cutter around each cookie.
  6. Place the cookies back into the oven for 2-4 minutes to finish baking. You also have the option to switch over to broil to toast the marshmallows, just watch it closely so the cookies don't burn!
  7. Remove the cookies from the oven and allow time to cool before transferring them to a plate. Enjoy!

Notes

You can use mini marshmallows or regular marshmallows for this recipe! I actually found the best luck with larger marshmallows, and then chopped them down to the size I wanted.


Any kind of chocolate will work for this recipe! I chopped up a few baker's chocolate bars for these cookies, but you could definitely use chocolate chips or chocolate bar pieces.


Remember to not over mix your dough, only fold ingredients until everything is slightly combined. Forgetting could lead to dry cookies!


If you prefer larger, bakery style cookies, make the cookie dough balls larger and put six on each pan. You may need a few extra minutes of baking time!


The best tip for last... Do not over bake the cookies! They will seem under baked when first out of the oven, but I promise that they will continue to cook as they cool down.
