Italian Wedding Soup

This year is Ben & I’s first as a married couple! By combining our families around the holidays, we get to try so many new dishes from each side! For our dinner each year, my mom makes her Italian Wedding Soup and it’s always been my favorite, but I’m kinda bias 😉 It’s always a hit, so I had to share it with you guys! The recipe is super simple, easy to make, and perfect for those cold winter days!

To begin, I add olive oil and then italian sausage to a large pan. I always heat it over medium heat to avoid burning. One it gets browned, I  just add in the celery, carrots and garlic and cook for around 2-3 minutes or until they look done. I add in the 10 cups of water with the pasta and bring it to a boil. Once boiled, in the water I dissolve Better Than Bouillon, which becomes the chicken stock of the soup!

If you’re not familiar with Better Than Bouillon, it is a paste concentrate that is equivalent (and in my opinion, better than) a bouillon cube or broth! Even a small amount adds that rich flavor that you would typically get from cooking a chicken all day! My favorite is the chicken, but they have a wide variety of bases in a range of flavors you could use to elevate your own holiday recipes. We use it to save time, add flavor to dishes like stuffing, and to make mashed potatoes creamier! You can search for Better Than Bouillon throughout their site or order online for those hard to find flavors.

After that, all I do is reduce the heat to allow the soup to simmer for about 10 minutes until the pasta is tender. I then add in spinach and allow it to wilt. The last step is just to season it, I typically use salt and pepper, as well as freshly grated Parmesan cheese! Yum!

I guess the secret is out, Sorry, Mom! 😂This dish is perfect for any holiday celebration or even on a cold day in! Italian Wedding Soup

Ingredients:

  • 1 pound italian sausage

  • 1 Tablespoon olive oil

  • 1/4 cup chopped onion

  • 3 large carrots chopped

  • 2 stalks celery chopped

  • 3 cloves garlic

  • 10 teaspoons Better Than Bouillion

  • 1/2 cup uncooked acini di pepe pasta

  • 4 cups spinach chopped

  • 1/2 cup parmesan

Instructions

 

  1. In a large pot over medium heat, add the olive oil and italian sausage. 

  2. Once browned, add carrots, celery and garlic. Cook for 2-3 minutes or until tender. 

  3. Add 10 cups of water and pasta to pot and boil. Once boiled, dissolve Better Than Boullion.

  4. Reduce heat to a simmer and cook for about 10 minutes until pasta is tender. Stir in spinach and allow to wilt. Season with salt and pepper and top with freshly grated parmesan cheese.
