  1. Preheat your oven to 375 degrees Fahrenheit and prepare a 9x13 baking pan.
  2. In a large skillet over medium-high heat, cook zucchini and tomatoes with Italian seasoning, oregano, salt, and pepper. Once the tomatoes are blistered and zucchini is cooked through, add cooked quinoa and salsa to the pan and stir to combine.
  3. Begin stuffing your bell pepper halves with the quinoa mixture. Then, sprinkle breadcrumbs evenly on top of all stuffed peppers.
  4. Cook uncovered for 30 minutes. Top each stuffed pepper with burrata cheese, about 1 oz round on each. Return to oven to cook for another 10-15 minutes, until cheese is browned and bubbly.
  5. Enjoy!
