Gingerbread Cinnamon Rolls

One of our family traditions is making cinnamon rolls on Christmas morning, and did you know that you can easily make them with just three ingredients? Just flour, baking powder, and greek yogurt! They are so easy to make and delicious, and using greek yogurt is a great way to add more protein and less sugar to the traditional recipe!

Gingerbread cinnamon rolls are a Christmas morning favorite, with a traditional cinnamon bun filling of sugar, cinnamon, and butter, with gingerbread flavors of ginger, nutmeg, and molasses!

  • Flour

  • Baking Powder

  • Greek Yogurt

  • Salt (Optional)

How do you make gingerbread cinnamon rolls?

To make these cinnamon rolls, simply prepare the dough by combining flour, baking powder, and greek yogurt. Then, make the filling by combining brown sugar, butter, cinnamon, ginger, nutmeg, and molasses and spread on dough. Roll and cut the dough, and place rolls into a baking dish and cook for 45 minutes. Allow time to cool and then spread icing, and enjoy!

Ingredients

For the Yogurt Dough
For the Gingerbread Flling
For the Gingerbread icing

Instructions

  1. Preheat your oven to 350° degrees Fahrenheit and line a small baking pan with parchment paper.
  2. In a large mixing bowl, whisk flour, baking powder and salt. Fold in greek yogurt and then knead the dough with hands until fully combined.
  3. On a lightly floured kitchen surface, roll out dough into a thin rectangular shape.
  4. Make your filling by combining brown sugar, cinnamon, ginger, nutmeg, molasses, in a small mixing bowl. Once combined, spread evenly on the dough.
  5. Begin to slowly roll the dough, starting from one of the shorter rectangular sides, until the dough becomes a cylinder shape.
  6. Using bakers twine, place a piece under the dough cylinder and slowly cross the ends into 5 even cinnamon buns. Place the rolls into the parchment lined baking dish, and bake for 40-45 minutes, or until golden brown and bubbly.
  7. While the cinnamon rolls bake, prepare the icing by combining salted butter, cream cheese, vanilla extract, powdered sugar, cinnamon, ginger, nutmeg, and molasses in a small mixing bowl.
  8. Allow the cinnamon rolls to cool for 5-10 minutes before spreading the icing over the rolls. Enjoy!
